Alter Ego Altbier
This beer is the “alter ego” of most German style beers we drink which are pale cold fermented lagers. Altbier is a rich, fruity warm fermented brown ale. The word “Alt” simply means old and refers to the time before the rise of lager brewing when ales were the dominant brews of Germany.

Anniversary Ale
We are proud to roll out our Anniversary Ale brewed in the style of the Trappist Monks of Europe. It is malty and refreshing with a light hop addition for minimum bitterness. By using traditional Belgian malts and yeast, this beer has its own unique aromatic qualities. Since much of its flavor is derived from the authentic yeast strain it is gently filtered to prevent the delicate flavors from being stripped away. As is the custom in Belgium and the Netherlands, a touch of dried orange, cumin and coriander is added to round out the flavor.

Bullpen Pale Ale

Copperline Amber Ale
This brilliant red ale, brewed with caramel and pale malts is a best seller at the Carolina Brewery. Using traditional brewing methods, the ale yeast provides a touch of fruit and works in tandem with the malt to make for a very drinkable ale. Kent Golding hops lend just enough bitterness and aroma to round out the flavor.

Downtown Trolley Brown / Bynum Brown
Chosen by our guests as one of their favorite specialty beers, this brown ale is freshly brewed in the distinctive American style with a deep garnet hue and more hops and malt than its English counterparts. The use of roasted barley imparts a nut-like flavor. These special ingredients make for a deep, mellow ale that goes great with any meal. Bynum Brown is the same tasty beer, just with a different name appropriate to Pittsboro!

Flagship India Pale Ale
Originally, this intensely hopped ale was brewed in the 18th century to survive the long sea journey from the cooler breweries in England, around the Cape of Africa to India where the temperatures were too warm to brew. This beer has a unique floral aroma from the generous addition of Cascade hops to the fermenter in a procedure known as dry hopping.

Franklin Street Lager
Our lager, made with an all malt recipe is a Bohemian style pilsener beer. It contains gentle bitterness, soft maltiness and is hopped true to style with Czech Saaz hops. This clear golden beer style which utilizes bottom fermenting yeast was developed in 1842 in the town of Pilsen at a time when all other beers were cloudy.

Funky Monk Ale
Centuries ago the Trappist Monks of Belgium and the Netherlands introduced this flavorful style of beer to the world and they have been brewing it ever since. By incorporating authentic Belgian malts and yeast and adding a subtle touch of coriander and orange peel we have created a malty amber brew true to style that starts smooth with a heavenly finish It’s a sin not to try it.

Phil N. Topemov's Imperial Stout
A beer style made famous because of Catherine the Great’s visit to England where she enjoyed the local stouts. She had batches of stout shipped to the palace in St. Petersburg, but in the long voyage the beer spoiled. Catherine was not amused! So some industrious British brewers made a super stout with a high alcohol level and lots of hops (a natural preservative) and lo and behold… Imperial Stout!

Maibock
The origins of Bock beer can be traced back over 600 years to the town of Einbeck, Germany. The great taste and aroma of fresh malt are the main flavor components of this style, but the hops though still in the background, also play an important role by not allowing the malt to completely dominate the palate. These deep golden colored lager beers were made to replace the darker winter brews and the name Maibock refers to the month of May when these spring-time beers make their debut.

Oatmeal Porter
This hearty dark ale with pleasing hints of molasses and chocolate is robust and full bodied. Fresh rolled oats compliment the brew by creating a nice silky texture and a creamy, rocky head. This style originally was a blend of three different beers that was called “Entire Butt” we’re not kidding! Porter became a style of its own during the early 1700’s when it was the favorite drink of the porters in the produce markets of London, England.

Oktoberfest
The German celebration of Oktoberfest began in Munich in 1810 to celebrate the wedding of Crown Prince Ludwig and Princess Therese. This two week long party has become the biggest beer drinking event in the world and is still going strong. Our Oktoberfest beer is an amber- colored lager made in the traditional style with a toasty malt flavor, medium body and a spicy hop finish.

Old Familiar Barley Wine
The Old Familiar is an authentic barley wine. It is made from malted barley like all of our beers, but with the strength and body approaching that of a wine. This full flavored ale is nicely balanced with Cascade hops from the American Northwest. We put plenty of these classic citrus flavored hops into the boil and then add even more after fermentation is complete. At 8.5% ABV this limited edition strong beer will be served only in pints and ten ounce pours.

Old North State Stout
Stout began as a porter style beer in London, England and originally described a beer that was stronger and drier than the sweeter porters. Old North State Stout is made with roasted, pale and caramel malts and English hops. Together they combine to make a full flavored ale with notes of dark chocolate.

Santa's Secret
Our winter ale, brewed especially for the holidays, boasts a combination of six different malts all working together to produce a rich beer with a soft creamy mouthfeel. Without revealing all of Santa's secrets, we can say that this tasty elixer contains a careful blend of coriander, cinnamon, orange and allspice. We think you'll agree - it's the closest thing to christmas in a glass.

Sky Blue Golden Ale
For those desiring a lighter beer that still has hand-crafted integrity, this beer is a Kolsch style ale made famous in its namesake city of Cologne (Koln in German). This thirst-quenching brew is spritzy, not too malty, with the pleasing aroma of imported Hallertauer hops. While fermented warm like all ales, Kolsch beer undergoes a cold aging period like a lager which results in a brew that is complex yet easy to drink.

Super Saaz Imperial Pilsner
Weighing in at 8.3% ABV this beer is super in both strength and flavor. World renowned for its distinctive peppery aroma, the Saaz hop is the favorite variety for all pilsner style lagers. This deep golden hued Imperial Pilsner is packed full of Saaz hops and the finest German malts. To Hell n’ Bock
Bock beer, though dark in color is actually a lager beer. The use of a lager yeast and a much cooler fermentation temperature (48 50 degrees F) is the main difference between this beer and an ale. This cooler fermentation results in a beer with less fruity flavor than an ale fermented at 65 68 degrees F. For that authentic bock profile, To Hell n’ Bock is crafted with lots of Munich malt. This grain has a toasty, bread -like aroma that imparts a delicious malty flavor to complement the fresh German hops.

West End Wheat / Circle City Wheat
Our seasonal wheat beer is an ale with flavor like no other. Its unique banana and clove yeast characteristics make it the juicy fruit of beer. Technically speaking this beer is known as a hefeweizen hefe is the German word for yeast and weizen means wheat. Visually the beer is somewhat hazy this is the hefe, taste-wise it is light yet malty this is the weizen. This mouth-watering brew is often served with a slice of lemon for a zesty summer cooler. Circle City Wheat is West End Wheat but with a name more appropriate to Pittsboro!
